KITCHEN SKILLS
Cut the börek evenly, slice the onion thin, grate cheese by eye, roll dough to the size of the tray, flip gözleme at just the right moment, pour perfect Turkish tea, peel an apple in one strip and balance the market scale. Then things get serious: roll vine leaves, stuff peppers, whisk a cake, fillet a fish, fold tiny mantı, spread lahmacun, shape köfte and twist simit.
When Ramadan comes, pack the pickle jar with no gaps, raise the coffee foam without boiling over, pipe lokma all the same size and cut crescent cookies with the least left over.
